Sun Dried Tomato and Spinach Noodles with a Balsamic Bruschetta Basil Toast
Perfect for a small dinner or lunch!
Recipe
Ingredients:
2 zucchinis ( 1 for each person you're cooking for)
1/4 cup of sun-dried tomatoes
1 cup of spinach
2 T of basaltic vinegar
1 tsp of minced garlic
Trader Joes Balsamic Glaze for drizzling
1 pinch of salt
1 pinch of pepper
1 T of oregano
1 T of butter
my bruschetta recipe:
2 cups of baby tomatoes
2 T of balsamic vinegar
1/4 cup of fresh basil
1 pinch of sea salt
1 T of butter unsweetened
shredded mozzarella
slice of favorite bread ( I chose a country loaf from my local farmers market)
1 tsp of minced garlic
1 pinch of salt
1 pinch of pepper
1 pinch or oregano
Instructions:
Wash your hands and veggies! First you will start off with making the bruschetta. Turn your skillet on medium-high, and line the pan with olive oil. Then drop the tomatoes in, the pepper, salt, garlic, and oregano. Mix around till the seasonings are evenly distributed. In another skillet on medium high, line the pan with olive oil, and put the zoodles in (I use a small vegetable spiralizer, you can purchase them from most grocery stores). Add the sun dried tomatoes, spinach, pepper, salt, balsamic vinegar, oregano, butter and minced garlic. Keep tossing and mixing till the zoodles get kind of soft, approximately 8-9 minutes. Back to the bruschetta, after about 7-8 minutes on medium high, the tomatoes should look like they are about to pop. Then add the balsamic vinegar, and start squishing the tomatoes. Once you have done that, lower the heat, and let it thicken up. Preheat your oven to 350˚. Once the oven has preheated, place a slice of the bread with a little butter on it and shredded mozzarella cheese in the oven for 5-6 minutes. Place the bread on a plate, and spread the bruschetta on it, and top with fresh basil and a balsamic drizzle. Then scoop some of the zoodles on to the other side of the plate and top with the sun dried tomatoes. Violà! Enjoy!
