Torta all'olio di oliva al cioccolato

This is for all the Chocolate Fans out there!





A Spin on the Traditional Italian Olive Oil Cake!





Recipe


Ingredients:


2 1/2 cups all purpose flour

3/4 cup cocoa powder

1 1/2 tsp baking soda

1/4 tsp baking soda

1 tsp kosher salt

1 1/2 cup granulated sugar

1 1/4 cup light brown sugar

1 T vanilla extract

1 cup Extra Virgin Olive Oil

1 cup whole milk

3 medium eggs, room temperature

1/2 cup boiling water

1/2 cup powdered sugar





Instructions:


First, sanitize your workspace and your utensils. Don’t forget to wash your hands! Preheat the oven to 350 degrees F. Then, grease a cake pan (I chose a 10-cup bundt pan).


Then, in a large bowl, sift your dry ingredients; the flour, cocoa powder, baking powder, baking soda, the salt, granulated sugar, and the light brown sugar. Then, in a separate bowl, combine all your wet ingredients . DON'T add the boiling water.....yet! So, add the vanilla, olive oil, milk, and the eggs. Whisk them until they have all fully incorporated!


Then add your wet ingredients to the bowl of dry ones, and fold with your favorite Spatula( mine is red!).

Slowly, add the boiling water and fold it until it's fully combined.


Then transfer to your cake pan of choice (I chose bundt). Then smooth out the top , using a spatula. Then tap the pan a couple times to remove any of the air bubbles.


Bake for 1 hour. Then, check using the toothpick method, if the toothpick doesn't have any batter on it, it means it's finally finished!


Let the pan cool for about 15 minutes. Then sprinkle the powdered sugar on top, then ENJOY!












INSIDER:

This cake pairs well with hot tea and a nice espresso! The inside is my favorite, it is super dense but also so light, all at once! This cake is so nice and easy, great to give as gifts, or just to share with family and friends. Don't forget the powdered sugar on top!!!
