Torta all'olio d'oliva

Let's travel to Italy and make an Olive Oil Cake!








Recipe



Ingredients:


2 cups all-purpose flour

1 3/4 cups sugar

1 1/2 teaspoon kosher salt

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1 1/3 cups extra-virgin olive oil

1 1/4 cups whole milk

3 large eggs

zest of 1 lemon

4 T of powdered sugar




Instructions:


Before we start baking, don’t forget to wash your hands! Clean your workspace, and put on some good music to set the mood! Pre-heat the oven to 350 degrees F. Oil or spray a 9-inch round cake pan (that is at least 2 inches deep) with cooking spray. Don't forget to line the bottom with parchment paper! In a large bowl, sift your dry ingredients ( the flour, sugar, salt, baking soda, and baking powder).



Using a blender(you can mix it in a large bowl) add your olive oil and milk, mix on a high speed for about 2 minutes. In another bowl add your eggs and lemon zest. Now, pour your milk mixture into the bowl with the eggs. Mix very well! Don’t forget to clean your hands after cracking the eggs! Next, add the dry ingredients to the bowl, and whisk until they are all combined.



Pour the batter into the prepared cake pan, and tap it on the counter just to get all those air bubbles out! Bake for 1 hour, or until the cake is a golden brown. When you go to take the cake out the oven , and the cake wobbles a little in the middle, that just means it needs a little more time!


Let the cake fully cool down, it takes about 15-20 minutes. Then transfer to a separate plate, and dust the top of the cake with powdered sugar. Add some garnish to the top, I used rosemary sprigs, and Enjoy!
