Coconut Curry Thai Soup
Perfect for the cold days, or when you are under the weather!
Recipe
Ingredients:
1 can of organic coconut milk
1 can of chicken broth
1 pinch of salt
1 pinch of pepper
1/2 of a red onion (diced)
2 1/2 T of red mild curry paste
1 1/2 T of ginger paste ( I bought the actual ginger and used a cheese shredder to shred it)
1 tsp of minced garlic
2 cups of cauliflower florets
1/2 yellow bell pepper
1 T of fish sauce
2 zucchinis
2 limes
jasmine rice
1 can of water
Instructions:
Wash your hands, and your veggies! Grab your favorite cutting board and knife. Cut and peel half of the red onion, and dice it into small squares. Grab a pot ( I used my cast-iron Le Creuest dutch oven), pour some olive oil at the bottom, and put your onions in. Turn your stove on to about medium, until your onions are cooked, and some may be a little brown. After about 6-7 minutes reduce your heat a little, and add in your curry paste, ginger, garlic, salt, a lime cut up into three parts, and pepper. Stir until everything mends together into somewhat of a paste. At this time if you wanted to add a meat you would do so. Then I added my cauliflower and bell peppers, mixed and increased the heat. Then add your can of coconut milk and the can of chicken broth. After I used the can of chicken broth, I filled it up with water and added the water to the pot. Turn the heat up to let the soup boil, and then add the fish sauce. Once it has come to a boil, I made zoodles, and added those as well (if you aren't a zoodles fan you can substitute it for glass noodles as well). Let it all cook for 7-8 more minutes. In the meantime, you can prep your jasmine rice. I get these cute microwavable, portion sized rice cups. You just pop them in the microwave for 1 min, and it is all done. Grab a bowl, and place the rice at the bottom, then turn off your stove, and scoop out the soup. I garnish with a lime slice as well, Enjoy!

I just made this soup for the first time last night when I have been having a cold, and it was out of this world! The curry helped my sinuses so much, and opened my airways in my nose.
