Great for early mornings, and study breaks!
Rustic Mexican Breakfast Toast
This is one of my favorite ways to eat breakfast in the mornings, to get a start on with my day! The recipe is super easy, and cheap, if you are looking for something light, flavorful, and delicious.
Recipe
Ingredients:
1 slice of your favorite bread (I chose a country loaf from the local farmers market)
3 eggs
1 pinch of salt
1 pinch of pepper
1 tsp of olive oil
2 T of your favorite salsa
2 pinches of Mexican cheese
Instructions:
In a small bowl, crack and whisk your eggs till they are the consistency you want. Then, add your salt and pepper to the bowl as well, and give that a mix! Turn your skillet on medium heat, and pour your olive oil on the pan, and wait for the skillet to heat up. When the pan is ready, pour your egg mixture on the pan, and wait till your eggs are ready to scramble! I like my eggs scrambled, but you can cook them however you'd like! When the eggs are ready to be taken off the stove, toast your bread, either in the toaster, microwave, or the oven. I used the oven; I set the oven to 350˚, and left the bread in for approximately 5 minutes, just to give it a nice brown color. Then, place the bread on a plate, and spread the eggs on top. Spoon out your salsa, and then sprinkle with the cheese. Ta-da! It is an easy, but scrumptious breakfast meal.

I absolutely love to use fresh ingredients when I cook. It makes a big difference in my lifestyle as well! Most of my ingredients are bought at Trader Joes, or the local farmers market by my apartment. I am not big into processed or canned foods, also.
