Going Gyros Crazy!

An easy take on the authentic Mediterranean cuisine.

This recipe only contains vegetables, but you are more than welcome to tweak it and add your favorite meats!


Recipe


Ingredients:

Pita Bread

1/2 cup of crumbled feta cheese

1/2 yellow bell pepper

1/4 cup of baby tomatoes

1/4 cup of kalamata olives

1/2 cup of hummus

2/3 cup of sliced cucumbers

1/4 cup of chopped fresh red onions

1 cup of fresh spinach


Instructions:

I can't even tell y'all how easy this is to make! It takes at most 20 minutes to prepare, and put this together. Preheat your oven to 350˚. In the meantime, grab a cutting board and a knife. Wash all your vegetables before using them! Cut the tomatoes in halves, and place to the side. Peel your onion, you're not going to use the whole thing so you just need to cut have of it, then save the rest. Dice your onion. Cut the kalamata olives in halves as well. Cut the cucumbers in slices then in half ( I love the skin of the cucumber, so you are more then welcome to leave it on. But, if you don’t like it, you can cut it off, as well). Cut half of the bell pepper, save the rest, then slice the pepper into long lines. When the oven is preheated, place the pita bread on a small pan, and into the over for 4-6 minutes just to give it a little color and toast it. When the pita is toasted enough, place it on a plate. Take a couple spoonfuls of hummus and spread it on the face of the pita, like saucing a pizza. Then in the center, add the spinach, tomatoes, cucumbers, bell peppers, olives, onion, and top with feta cheese ( Another amazing additive is Tzatziki sauce). Fold slightly at the middle, and Enjoy!
