Homemade Balsamic Bruschetta and Grilled Sun-dried Tomato Toasts

Let's Make A Toast!


These toasts are so fun for small gatherings, or to just eat as a snack!


Recipe


Ingredients:

1 bag of bagel chips or you can use a baguette

2 cups of baby tomatoes, or heirloom tomatoes

1/4 cup of fresh mozzarella

1 pinch of salt

1 pinch of pepper

1 drizzle of olive oil

1 tsp of garlic

3 T of sun-dried tomatoes

2 T of balsamic vinegar

Trader Joes Balsamic Glaze for drizzling


Instructions:

Put your skillet on the stove at medium heat, and spread olive oil on the pan. Then, add your tomatoes, garlic, salt, and pepper. (You also are welcome to cut the tomatoes in half, I don’t because I like my bruschetta to be very chunky). Turn your heat up a little past medium, and turn the tomatoes over. When you start hearing sizzling the tomatoes are probably going to burst soon, which is a good thing so don’t get startled! Do keep your face away from the pan, because the oil will continuously pop out the pan, and I don’t want it to get in your eyes, or land on your skin. Because it does burn! When the tomatoes start to form orange/ yellow boils on them, you can start to squish the tomatoes with your spoon/spatula. When they are all squished, add the balsamic vinegar and turn the stove back to a little before medium heat. The bruschetta will start to thicken up. Once the substance is thick enough for you, grab a mason jar, or a tub to store the bruschetta for the meantime. (The bruschetta can be stored in a container, in the fridge, for up to 2 weeks). While your pan is still hot, add the sun dried tomatoes, and a little drizzle of olive oil. Turn the heat back up to medium and sear the sun dried tomatoes till they look grilled, or have a darker color to them. Then you can turn the stove off. Place your bagel bites, or baguette slices on a cheese board, and take a spoon of the bruschetta and plop it in the center of each bite. Then you can either cut the sun dried tomatoes in half, or put the whole one on each toast. Next, add some fresh mozzarella, and drizzle the Trader Joes Balsamic Glaze over all the toasts, and sprinkle just a pinch of sea salt and your done!


Pointers

Don’t forget when you're done the bruschetta can be stored for two weeks. The Trader Joes Balsamic Glaze is absolutely amazing, and flavorful. It has the perfect amount of sweetness and tart. (It is a must try, if you have never had it) I use it a lot to top some of my dishes off, it just gives them that little kick of flavor!
